We don't see these very often and we're lucky to come across such beautifully marbled, dark burgundy tomahawk pork chops. These chops have a fat cap that will truly drop your jaw. Don't be alarmed...this fat...you eat. The Mangalitsa breed is known for it's soft fat that will melt in your mouth after slow cooked. We recommend indirect heat as these chops will flare up given the amount of fat that hugs the eye of the chop.

Preferred Cooking Method: Second City Prime's preferred cooking method for the Mangalitsa Pork Chop is to reverse sear or indirect heat on a grill! The oven should be set to 225 degrees fahrenheit. To meet your desired doneness, we recommend using a meat thermometer to keep an eye on the internal temperature of your meat.
Preferred Cooking Time: The Pork Chop should be put in the oven at 225 degrees until it reaches an internal temperature of 135-140 degrees fahrenehit. Let it rest for 10 minutes before searing on a pan or grill for 1 minute on each side.
