What Is Iberico de Bellota?

Iberico de Bellota is the highest grade of Spanish pork. "Bellota" means acorn — these are purebred Iberian pigs that free-range in the dehesa oak forests of Salamanca and Extremadura, finishing on a diet of fallen acorns. The result is extraordinary intramuscular fat — often compared directly to A5 Wagyu in richness and complexity.

Secreto Iberico

The "secret" cut — a flat muscle from behind the shoulder, heavily marbled with Iberico fat. Exceptional grilled or seared at high heat. One of the most prized cuts in Spanish cuisine.

Presa Iberico

The presa sits at the top of the shoulder blade. Deeply marbled, with a rich, complex flavor. Best cooked medium-rare to medium — one of the most versatile Iberico cuts.

Pluma Iberico

The pluma is cut from the end loin near the neck. Tender, well-marbled, and quick-cooking. Outstanding pan-seared or grilled over high heat.
