Known for its fat cap over a well marbled piece of beef, the Brazilian's did it best; slicing the roast into 1 inch thick steaks then skewering and slow roasting (rotisserie style) over an open flame. If you're not up for the challenge we've tried slow roasting in the oven or sous-vide and both methods work great! Just make sure that fat cap renders a bit and gets nice and charred. Ideal temperature is the 130-135 degree mark.
