Second City Prime's Beef Tenderloin Tails are USDA prime and wet-aged for 21+ days. The tenderness of each tenderloin tail is perfect for kabobs, stews or single portion steaks. Tails can be prepared like any other filet or can be browned and slow cooked. They share the same lean consistency and quality as the filet mignon but are a bit smaller in size.

Preferred Cooking Method: Second City Prime's preferred cooking method for the Tenderloin Tails is...grilling! The optimal grill temperature should be 400 degrees fahrenheit.

Preferred Cooking Time: The Tenderloin Tails should be grilled for about 45- 60 minutes or reach an internal temperature of 130 degrees fahrenheit. Let the meat rest for 15 minutes before cutting.
