Hailing from Hungary, the Mangalitsa pig is an Old World breed that is raised specifically for meat production. Referred to as the “Kobe beef of pork,” Mangalitsa meat is red in color and marbled with creamy white fat that results in a tender, supple texture and rich, nutty flavor.

 

A nice lean roast that can be cooked "fresh", low and slow; on the oven or in the smoker. Similar to roast beef. Can also be braised for pulled pork. These can also be cured for a boneless smoked ham or dry cured at home.

    • Cut: Flat is the long muscle from rear hind quarters.
