Hailing from Hungary, the Mangalitsa pig is an Old World breed that is raised specifically for meat production. Referred to as the “Kobe beef of pork,” Mangalitsa meat is red in color and marbled with creamy white fat that results in a tender, supple texture and rich, nutty flavor.
Cooking Method: Sous vide with black bean garlic sauce and sear to finish. Braising is also a good method with these!
