Preferred Cooking Method: Second City Prime's preferred cooking method for the Berkshire Pork Shank is to braise it! The oven should be set to 375 degrees fahrenheit. To meet your desired doneness, we recommend using a meat thermometer to keep an eye on the internal temperature of your meat.
Preferred Cooking Time: The Berkshire Pork Shanks should be browned in a braiser over medium-high heat for 10-12 minutes before adding all the good stuff to your braiser! After you will transfer the shanks to the oven and leave it for 2 1/2 - 3 hours or until the meat is fork tender and almost falls off the bone.
