You were always told to cook your pork tenderloin to well done - not here folks - ease your oven or grills and let this come off at medium. We like to pair it with 'The Rub' and a mildly sweet vinaigrette to balance the sweet and salty profile and since this cut is lean - we'll occasionally throw it on a bed of salad.
