The pork secreto is cut from the outside of the pork shoulder. Each piece is ingrained with layers of marbled goodness and flavor. Spanish Iberico hogs are raised on only acorns and provide a rich full flavor with the consistency of a ribeye cap but the look of a skirt steak. Cooked to medium, this pork only needs two minutes a side and cut against the grain. Use a conservative amount of seasoning, as the pork secreto carries a heavy flavor of its own.
