Hudson Valley Foie Gras (2oz)

This is a special cut with a smooth texture and a rich, nutty finish. This foie gras is the perfect topper to any meal of your choice. We personally like to top a burger with a 2oz portion of this foie gras or sear it and present it as an appetizer with a crostini. We love to pair this with a raspberry jam and cross hatch the foie to get that awesome presentation.

Preferred Cooking Method: Second City Prime's preferred cooking method for Hudson Valley Foie Gras is to pan sear it. In a non-stick pan, cook over medium-high heat with no extra oil in the pan (since foie gras is 90% fat, you don't need more). Sear it on both sides while rendering with its own fats until ready. To meet your desired doneness, we recommend using a meat thermometer to keep an eye on the internal temperature of your meat.

Preferred Cooking Time: The Hudson Valley Foie Gras is to be pan seared in a non-stick pan. Cook over medium-high heat on both sides for about 1 minute on each side.
